  • Traditionally, a pound cake is made with equal weights of flour, sugar, butter, and eggs.
  • There are many variations in many countries that have similar recipes that have evolved over time to include various weights
  • Germany's Eischwerkuchen ("egg weight cake") would be closest to a traditional pound cake
  • Sandkuchen (sand cake) while not a true pound cake (equal weight ingredients) has a similar texture.

Make Sandkuchen a bit different ...

Here I've iced the finished cake with lemon icing. Just take some icing sugar and use enough lemon juice (preferably freshly squeezed) to make a nice, not-too-liquid icing.

  • Play around with the flavorings in dough of this best pound cake recipe and create your own variation.
  • Use just vanilla (omitting the lemon peel), or use almond extract (my favorite). Or, try rum instead.
  • It is often just sprinkled with icing sugar before serving.
  • Many times, I'll coat it with a chocolate glaze as a treat.
  • Use a loaf pan, well greased and floured. Ideally, using a narrow and long loaf pan (about 3x10-inch) will give you a traditional looking Sandkuchen.

Oma says,

Because of its high butter content, this Sandkuchen is very moist and keeps well ... although there's seldom much left over when I serve it.

It tastes absolutely WUNDERBAR!

FAQs

What is a secret ingredient for cake? ›

Mayonnaise: The Hidden Gem in Cake Recipes

Made up of eggs and oil, mayonnaise acts as an emulsifier, adding creaminess and moisture to your cake. This unexpected addition can take your cake recipes to a whole new level. To incorporate mayonnaise into your cake batter, simply add a couple of tablespoons to the mix.

Why a cold oven is the secret to a better pound cake? ›

The difference is mainly in the cooking method. True to its name, the recipe uses the cold oven approach, aka forgoing the preheat. Cooking pound cake at a lower temperature for a longer period of time results in a fluffier cake with a crunchy golden crust. Simply put, it's the ideal baking method for pound cake.

Is it better to bake pound cake at 325 or 350? ›

Preheat oven to 325°F (163°C). Not 350°F. Generously grease a 10-12 cup Bundt pan with butter or nonstick spray. Using a handheld or stand mixer fitted with a paddle or whisk attachment, beat the butter on high speed until smooth and creamy, about 2 minutes.

What is the main ingredient that makes a cake moist? ›

USE VEGETABLE OIL. While butter undoubtedly imparts excellent flavor, vegetable oil can really elevate a cake when it comes to moisture. Replacing butter with vegetable oil in your cake recipes typically yields moist results.

What is the most important ingredient in a cake? ›

Flour is perhaps the most important ingredient in a cake mix, as it creates the basic structure of the entire cake. A major component of flour is gluten, which is a protein that provides a way for the cake to bind to itself.

Is cake flour or all purpose better for pound cake? ›

Cake flour – This flour works considerably better for pound cake than using plain/all-purpose flour (see in post for comparison). It rises better, and has a more tender crumb. Measuring cake flour: If using cups, sift flour into a large bowl first, then scoop out a cup of flour.

Why put water in the oven when baking pound cake? ›

Prepare cake pan by coating with butter and sugar. Set aside a different pan filled with a few inches of water (this creates moisture in the oven and prevents the cake from drying out while baking).

What happens if you don't preheat the oven before baking? ›

Preheating your oven helps ensure your food goes from refrigerator cold to blazing hot more quickly — spending as little time in the danger zone as possible. And even if this is a short amount of time, just know that some bacteria can multiply in the danger zone in as little as 20 minutes.

How long to leave pound cake in pan before removing? ›

How long do you leave pound cake in the pan? When it's done baking, let the cake sit in the pan for 10 minutes: no more, no less. It's enough time for the cake to firm up some after baking so that it doesn't fall apart, but not so much time that the cake gets stuck to the pan. Ten minutes is the sweet spot.

What rack should you bake a pound cake on? ›

This rack is the default, multi-purpose position in most ovens due to its placement between the upper and lower heating elements. When in doubt, consider the middle rack an actual happy medium for baking. The center oven rack is best for: Desserts, such as cookies, pies and cakes.

What happens if you bake a cake at 325 instead of 350? ›

Baking at a lower temperature yields a lighter crust. And not only is the crust lighter, it's more tender, as well. Notice the thicker, darker crust from the cake baked at 350°F (above left), compared to the crust from the cake baked at 325°F.

Can you overbeat a pound cake? ›

Be careful not to overbeat the butter-sugar mixture, especially on a hot day — you could rupture the air cells and cause the batter to be heavy.

What causes a pound cake to be heavy? ›

Store brands of sugar are often more finely ground than name brands, yielding more sugar per cup, which can cause the cake to fall. Store brands of butter may contain more liquid fat, and flours more hard wheat, making the cake heavy.

How thick should pound cake batter be? ›

Unlike layer cakes, which use a thin batter that should never fill the pan more than halfway (more on that here), pound cake batter is thick, and should fill the pan within an inch of the top to encourage a prominent crown.

What is the secret of a delicious cake? ›

Success of a cake depends on the correct blending of ingredients, the careful creaming of butter and sugar, as well as the gentle folding of egg whites (if added separately) to maintain maximum aeration. Please read Basic Rules For Baking. Fold or Folding: A method of gently mixing ingredients.

What is your best baking secret? ›

Combine ingredients as gently as possible without overmixing. Creamed butter and sugar should be pale and fluffy, never yellow and gritty. Butter temperature is a vital detail that should not be overlooked. Don't open the oven door until goods are done baking.

Which 2 ingredients help the cake to rise? ›

Firstly, you need to mix your baking powder/bicarbonate of soda through your flour before you add this to the mixture. These two ingredients are the most common raising agents in baking, so I've focused on them here (also make sure they are in date!).
