In Texas, Mexican influence has spawned a hearty cornbread made with fresh or creamed corn kernels and jalapeño peppers and topped with shredded cheese. Cornbread is typically eaten with molasses in the southern states and with butter and honey in the northern states of America.

Why do southerners not put sugar in cornbread? ›

The most common theory is a change in cornmeal itself. Until early in the 20th century, Southern cornmeal was made with sweeter white corn and it was water-ground. When industrial milling came along, that changed. The steel-roller mills used yellow corn that was harvested before it was ripe, so it had less sugar.

What is cornbread called in the South? ›

Masterclass notes that corn pone is distinguished from cornbread by the omission of eggs and milk. Both sources confirm that corn pone is cooked in a cast iron skillet, which is also the traditional cooking vessel for Southern cornbread.

What does adding an extra egg to cornbread do? ›

For those who don't like their cornbread to be "crumbly," member Jeremy Joseph suggests adding one additional egg white and only two teaspoons of baking powder. Some members had success with substituting alternative flours for the white flour, such as Bob's Red Mill 1-to-1 Baking Flour.

Should you let cornbread batter rest before baking? ›

By letting the cornbread batter sit at room temperature before baking, the cornmeal has some extra time to absorb the flavor from the other ingredients, and the baking powder gets a head start. I love using my cast-iron skillet for cornbread and preheat it before adding my batter.

Is cornbread better with milk or water? ›

Can I substitute water for milk in cornbread mix? Yes, you can, but it may result in a less rich flavor. If you're out of milk, try using cream or half-and-half, evaporated or powdered milk, or even plain yogurt. If you have dietary restrictions, try soy milk or oat milk.

Why does my cornbread have no flavor? ›

While oil can make cakes and quick breads luxuriously tender, I find the cornbread lacks flavor if butter isn't present. Because butter doesn't make the bread as moist as oil does, I pair it with buttermilk.

What ingredient keeps cornbread from crumbling? ›

Cornmeal gives cornbread its classic color and flavor, but too much can make your bread crumbly. Try replacing a little bit of cornmeal with flour. The specific measurements will depend on how much cornmeal and flour is in your recipe, but you should try to have more flour than cornmeal in your batter.

What race invented cornbread? ›

With roots in Mesoamerican, Native American, and African cultures; history and people have shaped this iconic American bread into what it is today. Corn, also called maize, is the most widely planted staple crop on Earth.

What is the difference between cornbread and Southern cornbread? ›

Northern cornbread isn't very sweet and is made with fewer eggs and yellow cornmeal to achieve a crumbly texture. Southern-style cornbread can be made with white or yellow cornmeal, has a buttery finish and calls for more eggs, which produces a cakelike texture.

Is northern or Southern cornbread better? ›

The verdict: Northern cornbread's cakey texture and sweetness allow it to be a stand-alone dish, complete without any mix-ins. It can still be used to soak up other foods, like cranberry sauce, but its sweetness makes it less versatile than Southern cornbread, and more suited to accompany other sweet foods.

Is Southern cornbread sweet or savory? ›

Real, traditional, Southern-style cornbread is savory, not sweet, and always has been.

What's the difference between white and yellow cornmeal? ›

Types of cornmeal: Cornmeal can be categorized primarily by two factors: color and grind size. Yellow cornmeal has the most prominent corn flavor, while white cornmeal has a more subtle, delicate flavor (it's especially nice in a ricotta cornmeal cake).

Is Jiffy cornbread the same as cornmeal? ›

Are cornmeal and cornbread mix the same thing? No, but cornmeal is one of the ingredients present in cornbread mix. The mix will have additional ingredients like flour, sugar, and salt for additional body and flavor, as well as a leavening agent like baking soda for a fluffier texture.
