Cheryl, my grown-up picky eater, loves her boxed mac and chez, so it can be hard to get her into gourmet territory.If she’s not interested in trying one of my experimental dinners, she always pulls a box of mac and chez out of the pantry.

Now I have a much healthier and inexpensive option for her to eat, which makes me feel better. Just boil up the mac, strain and add this powder to non-dairy milk in the pan. Whisk and stir in the noodles!

This makes 2 cups the vegan cheese powder, but you can double or triple the recipe if you want!

Ingredients

  • 1 cup rolled oats
  • 3/4 cup nutritional yeast
  • 1 tablespoon tomato powder or 2 tablespoons chopped sun-dried tomatoes (not packed in oil)
  • 1 teaspoon salt , or salt substitute
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon mustard powder , add more to make sharper
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon lactic acid
  • 1/2 teaspoon turmeric powder

Instructions

Make the vegan cheese powder:

  • Blend all ingredients until the mixture becomes a powder.

  • Store in an airtight container.

To use to make a cheese sauce:

  • Heat 1 – 1.5 cups non-dairy milk, water or use pasta water in a pan over medium heat.

  • Then add 1/2 cup of mix, whisk well.

  • Either toss in the cooked pasta is using, or cook till thick enough to pour over your veggies!

    Kathy, this looks so interesting and I would love to try it but is there any sub you can think of for the nutritional yeast? I know you can use miso but of course that won’t work if the end result is to be a powder.

      For this powder, you could dehydrate some miso, then blend in. I would start with 1/2 the amount of the nooch called for. You could use some tomato and mushromms powders too to get a great sauce mixture.

    This is amazing how it thickens up. I did use it over pasta, my 7 year old granddaughter loved it. My adult son loved it, but said “you vegans, need to come up with better names “ LOL

    This is really good! I thought the sauce was too thin and added more powder but I shouldn’t have done that. It still tasted great but I didn’t need to thicken it. This will be my go to for many dishes. It will be perfect for my numerous camping excursions. Thank you for this!
