I’m dairy free all the time because I have to be (ugh!), but we do try and cut out most grains while we are at home as well. That doesn’t mean I’m not down for a big bowl of popcorn or rice in my Chipotle, but for the most part we try and eat pretty clean.

But since our chocolate chip cookie craving wasn’t going away anytime soon I decided to do a little research to see what I could whip up that might satisfy us without completely ruining our streak… and that’s when I came across this recipe (my modified recipe is below)!

Could it be true? Was there really a cookie recipe out there that was both paleo and delicious?! To be honest most, of the paleo cookie recipes I’ve made taste pretty crummy (pun intended!). But this recipe seemed a bit more promising than any of the other ones I had tried. So I thought, what the heck, I’ll give it a whirl! Plus, I love any excuse to pull out my fancy-shmancy KitchenAid Mixer and ceramic bowl from Macy’s!

If there is one thing in my kitchen that I most enjoy using it’s my KitchenAid Mixer. For some reason it just makes me feel legit. I’ve had a KitchenAid stainless steel mixer for ages, but recently did a little upgrade and swapped it out for this pretty cream color mixer and gorgeous white ceramic mixing bowl. It just one of those kitchen staples that makes a statement, and this color-way is making me so happy! Plus, I love the way it brightens up my kitchen.

So, once I pulled out my mixer, I realized that I had most of the ingredients, but not all. I ended up modifying the recipe and it turned out better than I ever could have imagined! I now make these cookies at least once a week and feel ZERO guilt about eating them! They are grain free, processed sugar free, and oh-so-good. Please, if you do one thing this week, make these cookies!!

THE BEST PALEO CHOCOLATE CHIP COOKIES

INGREDIENTS

  • 2 c blanched almond flour
  • ¼ tsp. baking soda
  • ¼ tsp. sea salt
  • 4 T. coconut oil (not melted)
  • 1/3 c maple syrup (I usually use both, half and half)
  • 1 egg
  • 1 tsp. vanilla extract
  • 1/3 c. Enjoy Life Chocolate chips

INSTRUCTIONS

  1. Preheat oven and set 350 degrees.
  2. In a bowl, combine almond flour, baking soda, and sea salt.
  3. In mixing bowl, add the coconut oil, maple, and egg. Mix well.
  4. Add in vanilla and mix.
  5. Fold in chocolate chips.
  6. Make 12 cookies using a cookie scoop and place on a parchment lined cookie sheet.
  7. Bake for 14-15 minutes and allow to cool!

Also, I can’t wrap up this post without saying just how great of a wedding registry gift this KitchenAid mixer is for your Macy’s Wedding Registry, especially being in the midst of wedding season, I know we all need good gift ideas! But what I really love is that KitchenAid now has so many accessories that are affordable, like the ceramic white bowl!   5. So glad you posted these! I tried this recipe after you posted it on Instagram and my family is OBSESSED!! This is by far my new favorite cookie recipe, and I love that it’s a lot cleaner than most ones (ie not a pound of butter haha). Such a great find 🙂
