I think you'll love this grilled pork chops recipe. After you marinade, it only takes a few minutes to grill and then put the sweet, tangy sauce on it. My kids love these!

I am so, so sick of beef and chicken. My whole family is. So I'm trying to find other meats our family likes. I hated pork growing up. The way my mom made it, it was tough and dry.

She made it for Sunday dinner like it was a special thing or something, and I dreaded those Sundays. However, I'm happy to report that this pork recipe is really good! Seriously. I'm not just saying that. It's the most tender pork I've ever had.
We chose to try a fresh pork loin chop. Why? Because it's perfect for the BBQ grill. It only takes 7 minutes total to cook. Seriously. It's thin and tender and absorbs the marinade and gets flavorful.

We came up with this marinade and sauce after several failed attempts. Every. single. person in our house liked it. All six of us. That like never happens. I mean like maybe 5% of the time everyone likes and eats the same meal in our house.

Tips

  • You can marinate it anywhere from half an hour to overnight. The longer the better, although don't do more than 24 hours. A suggestion is to get it ready the night before, then when you get home, it just takes a few minutes to get the sauce ready while the grill heats up and cooks for seven minutes.
  • The olive oil could be substituted with pretty much any oil you want.
  • If you don't have fresh rosemary, dry is fine. Just use less because it's more powerful when it's dry. I don't think rosemary is a totally crucial ingredient, so you could leave it out if you don't want to go to the store just to get it.
  • You can leave the honey out if you don't handle sugar well or are restricted from it on your diet - but it will be very tangy and strong without the honey. But we all tried it without the honey and everyone liked it fine, but once I added the honey, it just made so much more sense. It makes it have a good balance of tangy and sweet.
  • I tested this recipe on a Traeger grill. The cooking times may vary a bit on a "regular" BBQ grill.
  • The amount of marinade and sauce is totally up to you. You may find this recipe makes too much, or too little, depending on your preferences. Don't be afraid to play around with the measurements until it's the amount you like.

Description

This is tangy and sweet with some bite from the mustard. Everyone in my family loves this. Plus, it only takes 7 minutes on the BBQ!

Ingredients

Scale

  • 1 Pound Pork Loin Chops

Marinade

  • ¼ Cup Olive Oil
  • ¼ Cup Balsamic Vinegar
  • 2 Tbsp Dijon Wholegrain Mustard
  • 1 Sprig Rosemary
  • ¼ tsp Real Salt
  • ¼ tsp Pepper
  • ¼ tsp Red Pepper Flakes (optional)
  • 1 tsp Garlic Powder

Sauce

  • ¼ Cup Balsamic Vinegar
  • 2 Tbsp Dijon Wholegrain Mustard
  • 1 Tbsp Honey
  • ¼ tsp Real Salt *
  • ¼ tsp Pepper
  • ¼ tsp Red Pepper Flakes (optional)
  • 1 tsp Garlic Powder

Topping

  • 1 Sprig Rosemary (chopped)

Instructions

Marinade

  1. Put the pork in a plastic zip bag and add marinade ingredients. Smush around until everything is mixed.
  2. Put in the refrigerator and marinade for half an hour to 24 hours, the longer the better.

Cooking

  1. Turn on the grill so it gets nice and hot, at least 400F.
  2. While the grill is heating up, put the sauce ingredients in a small saucepan and simmer for 5 minutes, or until it slightly thickens. Don't let it hard boil or it will burn very easily.
  3. Put the pork loin chops on the grill and close the lid. Don't peak. Let it cook for 5 minutes, then open the lid and turn the pork over and cook for 2 minutes on the second side.
  4. Remove from the grill and let set for about 3 minutes. Don't cut it or the juices will run out and it will be dry.
  5. Serve the sauce on the side or drizzle on top and top with chopped rosemary.

      The sauce is pretty strong, so something to absorb some of that flavor like mashed potatoes or cauliflower and then we usually do grilled vegetables with them.
